So just to confirm. Is this the functionality that means i could now take an immobilised ECU and pair it to a spare non-matching 5as unit that i have?

yes it is the same process.

In the video it is pairing to a Simtek unit, but a replacement 5AS would be exactly the same.

Note that the new 5AS must be un-immobilised first though, and if you need to program key fobs into the 5AS then you would have to do that first.
